Just as importantly, why assume any of those represent a "career," or that one will be doing just one kind of job?

In aviation in general, and helicopters in particular, one ends up wearing many hats, and doing many kinds of functions.  If you're flying a fire, for example, you may be doing longline in the afternoon, flying hot meals in the morning and evening, taking the incident commander for a mapping or survey mission several times a day, acting as helittack delivering people onto the fireline, running supplies, or any number of other missions.

The fire season is a great part-time job, in that it starts and ends in the summer, and you have to have other work throughout the year.  That could be changing companies, or changing assignments.  You may find yourself doing non-flying jobs for part of the year, moving to a new location, or doing some unrelated flying such as animal survey or game capture, flying power lines, ag, etc.

This is aviation: jobs don't tend to last forever, or even a long time, whether it's medical, corporate, oil, fire, etc.  Military flying is a step for some, a career for others.  Some government jobs are actually a career, with retirement and benefits.  Most jobs in aviation are not.
